"The location of the distillery is ideal for whiskey production. Summers tend to be mild with a maximum of 35°C and wild, windy winters, in which the temperature can drop to -4°C, ensure that the distillates mature quickly.
Critics all over the world agree: after just a short time, the bottlings taste much more mature than their age would suggest.
The region is also blessed with crystal clear groundwater that is filtered and clarified on its way across the Shirasu Plateau.
Another advantage: Kanosuke works with three individual pot stills. The copper stills made in Japan differ in the shape of the neck and the angle of the lyne arm.
Whether by redistilling in different stills or by blending distillates from the pot still trio: Kanosuke is able to create whiskeys with great depth and exceptionally smooth texture.
The single malts are based on barley malt from the UK, Europe, Australia and Japan. The ratio of peated to unpeated malt is 85:15.
(For future blended Japanese whisky, Kanosuke has also been making grain whiskey since 2010.)
It is fermented for 96 hours with Distiller's and brewer's yeast.
For cask aging, Kanosuke focuses on re-burned American white oak casks that previously held Mellowed Kozuru.
The distillery also has classic bourbon casks, sherry and wine casks, casks pre-treated with IPA or casks made from Mizunara oak.

"Kirsch Import takes over distribution for Kanosuke
"....Founded in 2017, Kanosuke is a new generation craft distillery in Japan. With three individual pot stills, the small operation on the southwest coast of the country distils soft whiskey with great depth of flavor early on.
From now on, Kanosuke is also available in Germany for the first time via Kirsch Import.
Kanosuke Distillery is located on Fukiagehama, one of Japan's longest sandy beaches. In the southwest of the country, where the East China Sea meets Japan, the climatic conditions for whiskey are ideal: mild summers and wild, windy winters ensure that the distillates mature quickly.

After a short time, the bottlings taste many times more mature than their age would suggest. They are mainly stored in American Oak Casks, which were pre-filled with the parent company's celebrated "Mellowed Kozuru" shochu.

The Kanosuke 2022 Limited Edition was made between 2017 and 2019
distilled in all three stills from unpeated barley malt
and bottled at cask strength in 2022.
Kanosuke's fourth limited edition single malt differs from its predecessors in that it contains a large proportion of sherry casks. There are clear sherry influences in the nose and palate, in combination with complex notes of coffee sweets, maritime spice and a pleasant bittersweetness..."
